Fluffy & Moist Muffins

Trying out a new muffin recipe and it turn got great!! Love the fluffy and moist texture!! This is the texture which I have been looking for!

Ingredients for 12 mini muffins:
120g self raising flour (I ran out of self raising flour so I used plain flour with 1 tsp of baking powder)
100g sugar
1/8 tsp baking soda (optional)
1/2 tsp vanilla essence (optional)
2 eggs
100g cooking oil or melted butter (I used melted salted butter)
100g milk (I used UHT low fat milk)

Methods:
Mixed the wet ingredients into the dry ingredients slowly.
Now you can add in any other ingredients like chocolate chips, raisin, blueberries, etc....
Bake in EuropAce Airfryer @ 180 degree for 15 - 18 min.

Roasted Five Spice Powder Crisp Chicken

Marinated overnight the chicken with Salt, Pepper and Five Spice Powder, keep in the fridge uncovered!

Airfried @ 180 degree for 60 min (EuropAce Airfryer)

Note: Keep in the fridge uncovered will make the chicken skin dry and when bring to roast, the skin will be crispy.

榨菜炒肉丝 Stir fried preserved veg with shredded meat

Normally my family like to use the preserved veg to cook porridge or boil soup. This is my first attempt to cook this dish and it turn out to be good!

Ingredients:
Shredded meat (I used pork lean meat)
Shredded preserved veg (榨菜)
Shredded red fresh chilli
Cooking oil

Marinade:
Cooking oil
Light soy sauce
Pepper
Cooking wine
Corn flour

Directions:
1. Heat oil and stir fried red fresh chilli awhile then add in shredded meat and stir fried over medium heat for 5 - 8 min.
2. Lastly add in the preserved veg and stir fried evenly for 1 - 2 min. In the mean while, add in a little light soy sauce for taste.
3. Serve hot with steamed rice or plain porridge.

Note:
Marinated the meat for at least half an hour.
Wash the preserved veg thoroughly and soaked in water for at least half an hour after cut.
Do not over soaked if not the preserved veg will be too bland. 
Bite a tiny bit to taste if you are not sure whether it is too salty or not.

Airfried Cashew Nuts & Crab Meat Stick

I love the rotary cage provided by the EuropAce Airfryer whereby I need not stir the food and it can cooked the food evenly. I just put the food in the cage and set the temp and duration.

Cashew Nuts
Temp: 180 degree  Time: 40 min

Crab Meat Stick
Temp: 180 degree  Time: 45 min 

Bread Cake made of 2 ingredients only!

Get inspired by a FB food group. And coincidence, I have one tube of ice cream in my freezer.
2 cups of ice cream (I used strawberries flavour)
1.5 cups of self raising flour
I have added chocolate chips and raisin.
Thawed the ice cream till milky texture. Mixed all ingredients together evenly and pour into a container, ready for bake.
Temp: 180 degree
Time: 30min 

It is best keep in the fridge and serve chill.

Lazy One Pot Rice for lunch!

Ingredients:-
2 cup washed rice
2 cup water
1 canned cai xin
1 small canned tomato sardines (slightly smashed)
1 cup mixed vegetables
2 teaspoon chicken powder

Directions:-
Mixed all the above ingredients and put to rice cooker to cook till cooked.

Baked Prata Cheese Pasta

Ingredients: Serve 2 to 3
Half packet of Pasta
2 - 3 pcs thawed Prata
4 - 5 strips chicken fillet (marinated with salt and pepper for half hour) (cut into small cube)
1 large potato (cut into small cube)
1 large onion (cut into small cube)
1 small sliced green, red and yellow bell pepper (cut into small pieces)
Minced garlic
1 small bowl mixed vegetables
1 tablespoon butter
1 can cream of chicken soup
1 1/2 can water
Shredded Mozzarella cheese
Shredded Parmesan cheese
Salt and pepper

Method:
1. Cooked pasta in water till soften and set aside.
2. Melted butter in a pot and stir fried garlic, chicken fillet, onion, bell pepper and mixed vegetables till fragrant.
3. Add cream of chicken soup and water to boil.
4. Add pasta and some mozzarella and parmesan cheese and mix evenly.
5. Add salt and pepper to taste.
6. Pour into container and then use the prata to cover the pasta.
7. Airfried 195 degree for 20 min or till the prata turn crispy and golden brown.

Refrigerated Overnight Oats

Teriyaki Saba Fillet

Ingredients:
One packet of frozen saba fish fillet 400g
2 tbsp teriyaki sauce (pic shown below)

Methods:
Wash and clean the saba fish fillet and pat dry it.
Marinated with teriyaki sauce and put in the fridge for half an hour or more.
Airfried @ 180 degree for 30 min. Turn over halfway and brush the remaining sauce over.

BBQ Chicken Wings

Ingredients:
4 pcs of chicken wings
Salt
Pepper
2 tbsp Barbecue sauce (pic shown below)

Methods:
Marinated the chicken wings with salt and pepper and keep in the fridge uncovered for at least 1 hour or more.
Brush a generous amount of BBQ sauce on the chicken wings.
Airfried @ 180 degree for 30 mins or more till you are satisfied with the crispness of the skin.
Brush BBQ sauce during airfrying. Turn halfway to get the evenly browned.

ABC Nutritious Soup

This is my version of ABC soup where I replaced the potatoes with apples (red). With the apples, the soup taste so sweet and nice.

Ingredients included red apples, carrots, tomatoes, onion, sweet corn, sweet & bitter almond, red dates chicken feets and pork bones.

I put all ingredients into a big pot of boiling water (except tomatoes and onion) over low heat for almost 2 hours. After an hour then i add in the tomatoes and onion as i don't want the tomatoes and onion to be boil till too soft and dissovled in the soup.

Put salt to taste before serving hot.

Wholemeal Wrap with Egg, Ham & Cheese

Prepared this wrap for Hubby before he go for his 42km Sundown Marathon! His energy food before the Marathon!! Jia You!! Jia You!! :D

Ingredients included Wholemeal Wrap, Mini Tomato, Mayonnaise, Egg, Ham & Cheese

Wrap it with aluminium foil and heat up in the mini toaster before serve.

Stir Fried Thick Bee Hoon

My anyhow cooked quick and easy meal for lunch. 

Ingredients:-
Thick Bee Hoon (I used one packet of Kang Kang brand 420g)
Carrot (Shredded)
Onion (I used yellow onion)
Tomato (I used mini tomato)
Minced Garlic
Egg
Fishcake (optional)
Chilli Padi (optional) 

Seasoning:-
Sweet Sauce
Light Soy Sauce
Fish Sauce (optional)
Sambal Chilli Sauce

Methods:-
Stir fried carrot, onion, tomato, garlic and chilli padi for awhile then push the ingredients aside of the wok, and stir fried the egg. Thereafter mixed all the ingredients together and add in a little water and then the thick bee hoon and stir well.

Add in seasoning and simmer for awhile to let the thick bee hoon absorb the seasoning. Serve hot.

Roasted Honey Glazed Chicken with Potato and Carrot

Ingredients:-
900g whole chicken
Salt
Pepper
Honey
Potatoes
Carrots
Onion

Directions:-
1. Marinated the chicken with salt and pepper, then put in the fridge uncovered for overnight. 
2. Take out from fridge and brush a layer of honey over the chicken and ready to roast.
3. 
For potatoes, carrots and onion, cut into large pieces and blanched for about 10 - 15 min or till half cooked. Drained and put together with chicken to roast. 
4. Brush some more honey over the chicken during roasting. 
5. Roast @ 195 degree for 40 min over EuropAce Airfryer or till cooked and browned.
6. Mixed the potatoes, carrots and onion with the meat sauce that drip during roasting and it is ready to serve hot.

Freshly Baked Nutella Blueberries Muffins

Fried Rice with Bak Kwa and Okra

Ingredients:
Cooked rice
Mixed vegetables 
White Onion (Chopped)
Okra (Lady finger) (cut sliced)
Bak kwa (cut into bite size small pieces)
Light soy sauce for taste

Direction:
1. Blanched the mixed vegetables till cooked and soften. Drained and set aside.
2. Stir fried white onion till frangant. 
3. Add in mixed vegetables, okra and bak kwa and stir fried evenly.
4. Lastly add in the cooked rice and stir evenly.
5. You may add light soy sauce for taste to your liking.
6. Ready to serve hot.
