Chocolate Muffin (baked by breadmaker)


(A) Dry ingredients:-
120g self raising flour
100g sugar
1 cup chocolate chips
15g cocoa powder

(B) Wet ingredients:-
2 eggs
100g melted butter
100g plain yoghurt

Mixed (A) & (B) together evenly. Pour the mixture batter into the breadmaker baking pan. Remember to take out the paddle.

Use a satay stick to test the cake. When it comes out clean, it is done.

Breadmaker: Kenwood BM250
Mode: Bake (1 hour)

Freshly Baked Lemon Cheese Muffin


(A) Dry ingredients:-
120g self raising flour
100g sugar
1 lemon zest

(B) Wet ingredients:-
2 eggs
100g melted butter
100g milk
1/2 tsp vanilla essence
1 tsp lemon paste (optional)

(C) 1 sliced cheddar cheese (tear into small pieces)

Mixed (A) & (B) together, half fill the muffin cup then put in sliced cheddar cheese then fill the muffin cup into 2/3 full.

Aifried @ 180 degree for 20 min

Fluffy & Moist Muffins

Trying out a new muffin recipe and it turn got great!! Love the fluffy and moist texture!! This is the texture which I have been looking for!

Ingredients for 12 mini muffins:
120g self raising flour (I ran out of self raising flour so I used plain flour with 1 tsp of baking powder)
100g sugar
1/8 tsp baking soda (optional)
1/2 tsp vanilla essence (optional)
2 eggs
100g cooking oil or melted butter (I used melted salted butter)
100g milk (I used UHT low fat milk)

Methods:
Mixed the wet ingredients into the dry ingredients slowly.
Now you can add in any other ingredients like chocolate chips, raisin, blueberries, etc....
Bake in EuropAce Airfryer @ 180 degree for 15 - 18 min.
