Stewed Mei Cai with Pork Belly

This is one of my Mama's favourite dish, which she just need one dish to goes with plain white rice.
 
Ingredients:-
Mei Cai (cut into about 1.5cm broad) (one packet bought from NTUC)
Pork Belly (sliced as shown in the pic)
Garlic (chopped)
Fresh Red Chillies
Shitake Mushroom (optional)
Roasted Pork (optional)
Water
 
Seasoning:-
Dark Soy Sauce
Light Soy Sauce
Sugar
Pepper
 
Methods:-
  1. Heat oil and sautee the garlic till golden brown. Add in the pork belly and stir fried till turn browned.
  2. Add in roasted pork, shitake mushroom, fresh red chillies and mei cai and stir fried evenly till frangant.
  3. Add water and simmer till water boiled and add in the seasoning.
  4. Simmered till mei cai and pork belly soft.
  5. Served hot with steamed white rice.
Tips:-
  1. Mei Cai has to be washed and rinsed with water for a few times.
  2. Sautee the garlic and pork belly to let the pork oil come out so that the mei cai will absorded the pork juice.
  3. Seasoning has to be added slowly and taste before adding.

Stir Fried Hairy Cucumber

Ingredients:-
Hairy Cucumber (cut into as shown in pic)
Carrot 
Shitake Mushroom
Tang Hoon
Dried Shrimp (minced)
Garlic (minced)
Water
Oyster Sauce
 
Methods:-
  1. Heat oil and sautee garlic and dried shrimp till fragrant.
  2. Add in mushroom, carrot and hairy cucumber and stir fried evenly.
  3. Add water and oyster sauce, simmer till soft and then lastly add in the tang hoon and simmer for awhile.
  4. Ready to serve.
 
 
 
 

Chicken Stewed

Ingredients:-
Chicken Boneless Meat (2 pieces)
Potato (cubed as shown in pic) 
Carrot (cubed as shown in pic)
Garlic (minced)
 
Marinate:-
Light soy sauce
Sugar
Pepper
Sesame oil
Oyster sauce
Corn flour
 
Methods:-
  1. Marinated the chicken meat for at least 1 hour or more.
  2. Heat oil and sautee garlic till fragrant.
  3. Add in the chicken meat and stir fried till browned.
  4. Add in potato and carrot and water and simmer till soft.
  5. Add in corn starch to thicken the sauce if it is too watery.
  6. Ready to serve.
 
 
 
 
 
 

Yam Cake

Ingredients:-
Yam
Rice flour
Water
Garlic
Chinese sausage
Dried Shrimp
Mushroom
 
Seasoning:-
Oyster sauce
Salt
Sugar
Pepper
 
Garnish:-
Spring onion
Fresh red chillies
Fried shallot
 
Methods:-
  1. Mixed rice flour and water and add in the seasoning and set aside.
  2. Heat oil and sautee garlic and dried shrimp till fragrant.
  3. Stir in mushroom and chinese sausage and stir fried till fragrant.
  4. Add in the yam and stir fried awhile and add in some water to simmer for awhile.
  5. Add in the no.1 batter and stir well till it thicken. Remove and pour into an oiled metal container and ready to steam for 45 min or till cooked.
  6. Remove from container when cooled and garnished and serve.
Tips:-
  1. Yam has to be cut into cubes size evenly.
  2. Batter mixed depends on what type of texture u prefer. For soft texture, batter should be abit watery. For firm texture, batter should be thicker. Use a spoon and see the back of the spoon to gauge the texture.
  3. Seasoning should be stronger so that when everything mixed together, the cake steamed is flavourful.
  4. You can use radish, pumpkin or turnip for this recipe.
 
 

 

Prawn Mee Soup

I used the Prima Taste Prawn Mee Sauce Kit to cook the prawn stock. But I have grinded some prawn shell (which i have collected and stored in the freezer) and stir fried for one minute before adding water and the premix prawn stock. Add soy sauce for taste. Remember to filter off the prawn shell before serving.
 
As I have added too much water so the soup is not so tasty. So remember to add the water gradually to suit your taste bud. Ingredients added is up to your liking.

Mee Rebus

Mee Rebus is one of my Mama's dishes. One day she told me that she wish to eat mee rebus and so I decided to cook it at my home and tabao for her... hehe... :)
 
I am using the Hai's mee rebus premix to cook the gravy soup with chicken stock. I boiled the chicken thigh till cooked and soften and shredded the meat and cook in the gravy soup to get the soup more flavoured with some chicken taste. And I also added more flavour of soybean paste and chilli paste to get the taste better.
