Mocha Wholemeal Loaf
Freshly Baked Mocha Bread Loaf for breakfast for the next few days!!!
Ingredients:
220g liquid (4 tsp Nescafe Coffee & 2 tsp Cocoa powder & 4 tbsp Milk powder & 1 egg & water) Mixed all these together to a measurement of 220g153g sweetened condensed milk
1 tbsp butter
1 tsp salt
453g wholemeal flour2 tsp yeast
Additional ingredients:
1 cup yellow & black raisin
1/2 cup sunflower seedsKenwood BM250 Breadmaker
Mode: Sweet
Crust: Light
Size: Large - 1 kg
Put all the above ingredients as per above sequence.
Add ingredients when the first beep sound.
Stop the machine at the last 1.5 hour and let the bread dough to continue proof for another 1 hour then on the machine and set to bake function to bake for 30 mins then off power.

Fried Bee Hoon
Usually I will fried white bee hoon because Hubby like white one but today I want something different so added some sweet soy sauce & dark soy sauce to fried it black.
I like the taste but Hubby still prefer the white one.
Spring Roll
To satisfied my craving for spring roll after seen my FB friend making it.
So I searched whatever I have in the fridge and made these.
Wrap with bean sprouts, carrot, mushroom, black fungus & dried shrimp.
Seasoning with salt, sugar, pepper & garlic powder.

Steamed Spare Rib with Miso
I have made this dish before but using airfried.
This time I used steamer to steam for about 30 - 40 mins or till the spare rib soften.
Marinated with miso paste, light soy sauce, honey, chilli padi, water & corn starch for at least 30 mins.
Shitake Mushroom & Bacon Pizza
Made this just because Hubby want supper.
Ingredients needed, wrap, tomato paste (I used the leftover tomato bake beans to spread on the wrap), shitake mushroom, mozzarella cheese & bacon.
Airfried @ 195 degree for 20 mins.

Christmas Eve Dinner
Olive Rice & Roasted Five Spice Chicken with Sweet Corn, French Fries & Lady Finger!!
==Roasted Five Spice Chicken==
Marinated the chicken with salt, pepper & five spice powder and put in fridge overnight uncovered. (this is to let the skin dried up so that when put to roast/airfry the skin will be crispy)
Airfried @ 195 degree for 60 - 90 min or till cooked and the skin is crispy.
==Olive Rice==
Cooked the rice as usual and after the rice is cooked add in olive vegetables and mixed evenly.
==Sweet Corn==
Steamed the sweet corn kernels over high heat for 20 mins. Added salt and butter for taste (optional).
==Lady Finger==
Steamed lady finger over high heat for 5 - 8 mins. Added salt and pepper for taste.

Dong Zhi Tang Yuan

Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get-togethers (especially in the southern parts of China and in Chinese communities overseas) is the making and eating of tangyuan (湯圓) or balls of glutinous rice, which symbolize reunion. Tangyuan are made of glutinous rice flour and sometimes brightly coloured. Each family member receives at least one large tangyuan in addition to several small ones. The flour balls may be plain or stuffed. They are cooked in a sweet soup or savory broth with both the ball and the soup/broth served in one bowl.
Steamed Spare Ribs with Salted Black Bean
Steamed Spare Ribs
Cut spare ribs into even small size. Marinated with oyster sauce, salt, sugar, pepper, light soy sauce, hua tiao wine, sesame oil, corn starch, minced garlic, salted black beans (slightly chopped) and chilli padi for at least 30 mins.
Steamed over high heat for at least 30 mins or till spare ribs soften.
Cereal Prawn
CEREAL BUTTER PRAWNS (麦片虾)
(Recipe for 2-4 persons)
Cereal mix
¾ cup Nestum cereal (original flavour)
½ tsp salt
1½ tsp sugar
1½ tbsp milk powder
300 g medium size prawns (8 pieces)
trim, devein, wash, and dry thoroughly
1 tsp salt
½ egg, beaten
1½ tbsp plain flour
vegetable oil for deep-frying
30 g unsalted butter (2 tbsp)
1 bird's eye chilli, thinly sliced
6-10 sprigs curry leaves
rinse and dry with paper towels; discard stalks to yield about 1/8 cup
Thoroughly stir ingredients for cereal mix. Set aside.
Sprinkle prawns with salt. Add egg and mix thoroughly. Sprinkle with flour and mix till coated. Deep-fry in just smoking oil over maximum heat possible till just cooked. Drain.
Heat butter till bubbling and lightly brown. Add curry leaves and chilli. Fry over medium heat till fragrant.
Reduce heat to low. Add cereal mix. Stir till lightly golden. Curry leaves should crisp up as excess moisture is absorbed by cereal.
Add prawns and toss till well mixed, turning off heat as cereal turns fully golden brown. Taste and adjust seasoning if necessary. Plate and serve.

Curry Chicken (Quick & Easy)
Ingredients:
1 whole chicken chopped into large pieces (about 1.7kg)
8 tbsp Baba brand meat curry powder (mixed with a little water to form a paste)
4 - 5 medium potato (peeled and cut into large pieces)
3 large red onion (peeled and cut into four pieces)
4 - 5 cloves garlic
4 - 5 small onions

Marinade the chicken for at least 30 mins

Light soy sauce
Sugar

Deep fried the potatoes and set aside.
Blended the garlic and small onion. Set aside.
Heat a deep pot with 2 - 3 tbsp cooking oil and stir fried the blended ingredients for a 2 - 3 mins. Added in the curry paste and stir fried for 5 - 8 mins. Be careful not to let it burnt. Add more cooking oil if it get too dry.

Add in the chicken and stir fried well. Then add in water gradually. (Do not add too much water if you prefer dry curry)
Let it simmer for about 10 mins. Then add in the potatoes and onion.
Continue let it simmer for another 10 mins. Add salt or sugar to taste.
Off heat and let it stay for another 10 mins before serving with plain white rice.
Specially Made Wrap
Specially made Wrap for Hubby before he set off for his Marathon early in the middle of the night.
This time instead of using mayonnaise, I used low fat plain yoghurt for the dressing.
Ingredients included lettuce, mini tomato, hard boiled egg, bacon strip, crispy chicken strip, hash brown & sliced cheese.
Tomato Rice
Currently, whole tomato rice is very popular. So I have did my own creation of whole tomato rice also.

Stir Fried Eggplant with Garlic Miso
Ingredients:
(A)
1 eggplant
2 tbsp olive oil
(B)
2 tsp minced garlic
1 chilli padi
1 tbsp white miso paste
1 tbsp light soy sauce
1 tbsp honey
1 tbsp water
Mixed eggplant with olive oil and airfried for 15 - 20 min.
Mixed ingredients (B) evenly.
Heat pan and bring the airfried eggplant together with the mixed ingredients (B) and stir fired evenly and simmer for awhile.

1 box of silken tofu 300g
2 beaten eggs (about 100g)
200g fish paste
150g water
Seasoning:
Light soy sauce
Sesame oil
Pepper
Mashed the tofu evenly with a fork, add in beaten egg, fish paste and water. Mixed evenly and add in seasoning and stir thoroughly and steamed over high heat for 15 minutes. Sprinkle some spring onion when served hot.

Put on top of the marinated meat with chopped small pieces of salted fish.
Steamed over low heat for at least 1.5 hour.
